Encona Gari is made from the cassava root, also known as manioc and tapioca, a vegetable which originates from Brazil. In the Southern Philippines it is grated and steamed, then eaten as a staple instead of rice. In West Indian cuisine Gari is normally cooked to form a thick 'porridge' and served as an accompaniment to stews and curries. It can also be used in desserts.
